Healthy Nachos

Put a health spin on a classic winter comfort food, Nachos!

Ingredients:

- 600g beef mince

- 1 large red onion sliced

- 5 gloves garlic, crushed

- 2 tsp paprika 

- 2 tsp ground coriander

- 2 tsp ground cumin

- 1. tsp chilli powder

- 1 can chopped tomatoes

- 1 can red kidney beans, drained

- 2 cups beef stock

- 1/4 cup tomato paste

- 4x wholemeal wraps

Salsa:

- 1 avocado, diced

- 1 cucumber, diced

- 1/2 cup chopped coriander

- Squeeze lime juice

 

1. Preheat oven to 180c bake.

2. In a frying pan add a bit of oil and cook the mince so it's nicely brown and then put aside.

3. In a different pan, add the onions and garlic, cook until soft. Add the mince in with the onions and garlic, along with the paprika, coriander, cumin, tomatoes, beans, stock and tomato paste. Simmer until it reduces.

4. Brush the wraps lightly with oil. Bake in the oven for roughly 10 minutes and make sure you turn them over once.

5. Combine the salsa ingredients together in a bowl. Serve the nachos with the salsa and if you like, add sour cream and grated cheese on top.

This  recipe serves about 4 people, delish!
