Smashed Avocado

Who doesn't love a bit of smashed avocado for brunch?! Try out our simple and healthy recipe for your next brunch date.

1. Place the avocado in a bowl and mash roughly with a fork. Add mint and a squeeze of lemon juice and mash until just combined. Season with salt and pepper to taste.

2. Toast rye bread until golden. Spoon 1/4 of the avocado mixture onto each slice of bread and top with tomato.

You can also top with a poached egg for an extra protein hit! Delish!
