Start your day off right with this delicious and nutritious avocado and egg toast. All you need is a slice of whole-grain bread, an avocado, and an egg. Toast the bread, mash the avocado, and top it with a sunny-side-up egg. Voila! You have a protein-packed breakfast that will keep you energized all morning and fuel your next personal training session.
1 slice of whole-grain bread
1/2 ripe avocado
1 large egg
1 tbsp pesto
Salt and pepper to taste
Toast the bread until crispy.
While the bread is toasting, cut the avocado in half, remove the pit, and mash the flesh with a fork.
Heat a non-stick skillet over medium heat.
Crack the egg into the skillet and cook until the white is set, but the yolk is still runny.
Spread the mashed avocado on the toasted bread and top with the fried egg and pesto.
Season with salt and pepper to taste.
