Quick Veggie Omelette

If you're looking for a quick and easy lunch or dinner option, a veggie omelette is a great choice. Simply whisk eggs and pour them into a hot skillet with your favorite veggies, like spinach, mushrooms, and bell peppers. It's a filling and nutritious meal that's easy to customise to your liking. Plus, it’s the perfect post personal training meal. 

Ingredients 

  • 2 large eggs 

  • 1/4 cup of diced capsicum 

  • 1/4 cup of sliced mushrooms 

  • 1/4 cup of chopped spinach 

  • Salt and pepper to taste 

  • 1 teaspoon of olive oil 

Method 

  1. Whisk the eggs in a bowl with salt and pepper to taste. 

  2. Heat the olive oil in a non-stick skillet over medium heat. 

  3. Add the capsicum, mushrooms, and spinach to the skillet and sauté until tender. 

  4. Pour the whisked eggs into the skillet and cook until the bottom is set. 

  5. Use a spatula to fold the omelette in half and cook for an additional minute or until the eggs are fully cooked.
