This quinoa bowl is a great option for a quick and easy lunch or dinner aka the perfect post personal training meal. Simply cook quinoa and top it with your favourite vegetables, avocado, and a protein source like grilled chicken or tofu. It's a filling and nutritious meal that's easy to customize to your liking.
1 cup of cooked quinoa
1/2 cup of vegetables (cherry tomatoes, cucumber, lettuce.)
1/2 avocado, sliced
4 oz of grilled chicken breast or tofu
Salt and pepper to taste
1 teaspoon of olive oil
Cook the quinoa according to package instructions.
Meanwhile, chop the vegetables and grill the chicken breast or tofu.
When the quinoa is done, divide it between two bowls
Top each bowl with the grilled chicken breast or tofu, sliced avocado, and chopped vegetables.
Drizzle with olive oil and season with salt and pepper to taste.
